Get the Most "Beauty" Out of Your Food

I LOVE Dr. Oz and his health and nutrition knowledge, and this article that was from his fantastic site about eating "beauty-rich" foods was just right to pass on to my beautiful followers! So, go to a lovely farmers market this weeked and enjoy picking out things to enhance your outside to match your inside... or vice versa!


Little diet changes that make a big difference!

You eat a steady diet of fruits and veggies so you must be getting the most possible beauty benefits, right? Not so fast. Congrats on your healthy eating routine (your body will thank you later!), but there’s even more you can do to increase the prettying powers of your food. When it comes to beauty and wellness, it’s not only what you eat, but how you eat and prepare food, says Executive Chef, Jim Perko, from the Cleveland Clinic Wellness Institute. Here are twelve expert secrets to maximize the beautifying effect of food:
Pair healthy fats with veggies “Small amounts of good fats, like those found in olive oil, avocados and nuts, help the body absorb antioxidants and other essential nutrients found in vegetables”, says Janel Ovrut Funk, R.D., author of the "Eat Well With Janel" blog. So, instead of drenching your salad with a processed, fat free dressing, drizzle a little bit of olive oil and sprinkle some walnuts on your greens to increase the absorption of necessary nutrients. “Healthy fats also provide beauty boosting vitamins and antioxidants, such as vitamin E which helps to moisturize your skin,” says Funk.
…especially sweet potatoes. Beta-carotene, a powerful antioxidant, is better absorbed with a little bit of healthy fat, says Samantha Heller, R.D., exercise physiologist and author of “Get Smart: Samantha Heller’s Nutrition Prescription for Boosting Brain Power and Optimizing Total Body Health.” In the body, beta-carotene turns into vitamin A, which is great for both your skin and your eyes.
Get strategic with C. The iron in plants is not readily absorbed in the body, so it needs help from vitamin C, explains Funk. By adding C-rich foods like citrus fruits, broccoli and bell peppers to your diet, you’ll help increase the absorption of iron, which is important for overall energy. For example, try a spinach salad with grapefruit wedges or sautéed kale with bell peppers. Added bonus of getting more C: “it helps to promote collagen production, keeping your skin looking supple and fresh,” says Funk.
Chew Longer. When you eat cruciferous veggies, like broccoli, cabbage and cauliflower, chewing them longer will break down the food, allowing your body to better absorb the nutrients, says Perko. So, make sure you chew plants well instead of swallowing after just a few quick bites. These crunchy veggies are extra important when it comes to longer chewing because they contain both soluble and insoluble fiber, so you’ll want to get as much out of them as you can. “Chewing your food thoroughly will make more compounds available to your body,” agrees Heller.
Add avocado to everything, especially salads. This green superfood has serious skin benefits on it’s own due to the high omega-3 content, says Lindsey Toth, R.D., author of the "Fresh Squeezed Nutrition" blog. But, it’s also been found to help your body absorb protective phytochemicals like lycopene from tomatoes and lutein from dark green vegetables when eaten together. “Throw together a spinach salad topped with cherry tomatoes and avocado, and then add broccoli and strawberries for a triple beautification whammy!”
Blend Your Kale. Worried that you won’t get enough nutrients when they come in juice or smoothie form? Actually, the exact opposite is true. “When you put foods like raw kale in the blender, the blender breaks them down and your body will absorb more of the nutrients,” says Perko. Kale, which has as much calcium as a glass of milk, is a beauty powerhouse because it’s filled with antioxidants as well as vitamins A and C...
 Buy Local. Whenever possible, get your fruits and veggies from produce stands or farmers markets. “Studies have found that some produce loses nutrients the longer it sits on the shelf,” says Toth. Sourcing your fruits and vegetables from your local farmers market will help guarantee they're still jam-packed with beauty-boosting vitamins and minerals when you eat. An added bonus: Fresh produce tastes delicious and you'll feel good supporting your local economy.
Increase surface area to add spice. If aversions to certain flavors (like fish) keep you from consuming good-for-beauty foods, try this trick: increase the surface area and pile on the spices or flavorings. “If you cut an eight-ounce piece of salmon into six bias cut slices, you can then put more garlic, spices and herbs on it to add more flavor,” says Perko. By adding surface area, you add more seasoning options.
Eat fruit on an empty stomach. Because fruit is composed of simple sugars, it digests very quickly in the stomach. If you eat fruit for dessert after a heavy meal, it takes longer to digest, and the fruit starts to ferment in your stomach, says Snyder. This can lead to bloating and poor digestion. Enjoy fruit as a stand-alone snack or before your largest meal of the day... lunch!
Steam steam steam. Whether you’re using a microwave, charcoal grill or stove, it’s the heat and amount of time you’re cooking that affect nutrient losses, says Funk. The longer and hotter you cook a food, the more you’ll lose certain heat and water sensitive nutrients, especially beauty boosting vitamin C. “Steaming vegetables is a great way to retain most nutrients in vegetables,” says Funk. One thing to avoid: boiling your veggies, because many of the nutrients leech out into the water (which you then pour down the sink).
Do something to your tomatoes. These juicy red veggies contain the antioxidant lycopene, which has some great inner body benefits (might help fight aging, stroke and heart disease), but it also may keep your skin healthy by protecting against sunburn and sun-induced skin aging, says Funk. The best way to get your lycopene: From cooked tomatoes, canned tomatoes or tomato paste, which can increase the availability of lycopene more than eating tomatoes raw, says Funk.

sweetly scented

What scents do YOU adorn yourself with?

I have only recently begun to collect and tuck away my perfume bottles after the perfume has long been enjoyed. I SO wish I would have thought to do this years back when I began to adorn myself with scents of stages in my life!

As a teen, I wore White Shoulders, Sand and Sable and Jessica McClintock. As a young woman, Red Door, Eternity and an array of Victoria's Secret bottles, body creams and lotions lined the top of my dresser. As an older young woman, I continue to adore the classics to the contemporary scents from Chanel No. 5, Estee Lauder Beautiful and the Pleasures line and Miss Dior Cherie to Flora by Gucci, Juicy Couture, Michael Kors Very Hollywood, Marc Jacobs Daisy, Vicktor and Rolf Flowerbomb, True Religion and feminine and floral lines.

Perfumes, colognes and oils of all scents, bottle shapes and sizes - too many to count and name - are LOVED by women and men.

A scent can define you and the place in life that you are encompassed by. It can evoke a memory and create a mood. It can become a lovely habit to enjoy and wrap yourself in.

3 Nutrient Rich "A's"!

What better place to begin than at the very beginning of the "nutrition alphabet" with some of the most health beneficial foods right at our fingertips? Pop these into your shopping cart and relish in the taste, texture and vast multitude of ways they can be prepared and enjoyed!

Artichokes: Could nature be prettier in a veggie than when you get to the inside of an artichoke? The merlot/purple color blended with the olive green tones is GORGEOUS in there, and divine both to the tongue and our health! There are only 25 calories in a medium artichoke with 16 essential nutrients, boasting also a good source of fiber, vitamin C and folate. Containing also Cynarin and Silymarin, a powerful antioxidant, it benefits the liver and regenerates healthy tissue. Used with a multitude of recipes from a simple Parmesan cheese and artichoke dip to steamed herb butter glazed baby artichokes tossed with chicken and wild rice, artichokes are super versatile, and as part of a low fat, high fiber diet, can help reduce the risk of heart disease, certain cancers and birth defects. I personally LOVE them whether atop thin crust pizza, tossed in a pasta with shrimp and pesto or simply steamed, dipping the yummy leaves into a mixture of fat free sour cream with lemon juice and lemon pepper. The best part is the heart and stem at the end. ABSOLUTE PURE BLISS!

Avocados: The most fabulous fruit EVER! It is tasty on its own, has an aphrodisiac effect {woot woot!} is creamy, and awesome in recipes, atop sandwiches, in salads, made into guacamole or simply in fresh salsa scooped onto a chip. One medium sized avocado has about 100 calories and almost 12 grams of FIBER! Avocados also provide nearly 20 essential nutrients, including potassium, Vitamin E, B-vitamins and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit. It comes in it's own serving bowl, and keeps your digestive tract working nicely and your colon cleansed. Mixed with honey, a ripe avocado even makes a nourishing facial mask for thirsty skin. Yum!

Asparagus:
Whether raw or steamed, roasted, grilled or pickled, asparagus is awesome for both variety and nutrition! Boasting an excellent source within it's slim stature of Vitamin B folate and Vitamins A, C and K with great fiber, having a serving of asparagus 2-3 times a week is optimum. Chop it into a stir fry, mince it and put into eggs or quiche, stem and blend for an amazing soup, eat it raw for an on-the-go snack. The only adverse effects with asparagus? Your urine will smell funky {haha and EW!} but your heath benefits will outweigh that greatly! Also, asparagus is high in Vitamin K, so the effectiveness of anticoagulants may have an interference.

From Within Your Skin

What radiates from you? What causes your glow, your light you bring into the world? Do you SHINE? If so, do you try to SHARE that shine, that light from within, with those with whom you encounter, those who surround you, as well as those far away and also those whom you do not even know at ALL?

YOU are an incredibly orchestrated, beautifully created and perfectly shaped part of this world, crafted with unending love and immeasurable joy. You wouldn't be here if you were not meant to be and you have a WALK and a PURPOSE and a REASON for being here all your own.

Into you was breathed an amazing breath from which you continued on... a starting point to ALL you would become, do and experience in this life. In that first gasp, you began to flourish and revel in the newness of all things opposite to your previous surroundings, and you had to sustain the changes and events that followed as you grew, learned and overcame challenges. And you continue to do so every day, sometimes flourishing, sometimes flailing, but ALWAYS with a deeper purpose, although you do not know what the full and intended purpose of your existence is.

That same breath we continue to breathe also encompasses our fears, triumphs, despair and joy, and we have also given the sweet echoes of LAUGHTER into the world. The sounds of even one lone person in this huge world are heard, no matter what volume they voice them or what place they reside. And when it is laughter and excitement, and sweet words of kindness and compassion and truth and light, it blankets and comforts the hearts and lives of those among us TREMENDOUSLY. We are to lift and bring the gifts of light and hope and service into the lives of others by His light and His breath that was placed initially within us. Whether in prayer or in person, the positive lift of our heart to another is hugely impactful, and reaches farther than we will EVER know.

And you reside in your skin a creature of your habits, you know exactly what makes you YOU! Do you make it a habit to keep your outlook POSITIVE? Do you have a "glass half full" state of mind? Do you laugh and let your laughter be contagious? Being self confident and having self assurance is attractive and when you resonate positive energy, positive people are DRAWN to you, and those that can use a "positive push" will BENEFIT from you! It could take but ONE simple gesture to turn one's entire frame of mind and emotional status around, and that gesture, whether in word or action can be as simple as holding a door open, as personal as holding someone's hand, or as compassionate as lending your shoulder to gather tears.

Be confident in who you are and know that you ARE beautifully and perfectly made and that you ARE immensely loved and cherished! Be also aware of someone who could use hearing that sentence and PLEASE SHARE IT with them! Be understanding and know that NOBODY is above another except to lift another up. Enjoy being in the skin you live in and know that you CAN begin today to make better choices to make it a healthier skin to live within. Embrace the moments and the memories you are experiencing, and tell those you love THAT YOU LOVE THEM! We are all here unknowing of when our last breaths will be, so use them wisely, with integrity, love and empathy for everyone. And embrace life to the fullest... make every day from beginning to end productive, working toward your goals and dreams!

Lastly, a smile is contagious, so USE it. And LAUGH! Laughing blesses us with better health, a better emotional status, and deeper personal and social enrichment and overall well being. Laughter is, after all, the very best medicine next to LOVE!

Lime/Lemon/Orange Cream Pie

Limes are sooooo heavenly to use in summertime desserts, and this ABSOLUTELY DELISH recipe from my friend, Becky, is the epitome of summertime cool refreshment and sweetness!

Note: You can also substitute the lime {or I used Lime Margarita mix woot woot!} with lemon juice or orange juice... they all make amazing flavors for the pie!

1 can sweetened condensed milk
1 cup full fat sour cream mixed w/ 2 Stevia pkts and 1 Tbsp vanilla extract *
OR 1 pkg cream cheese mixed with 2 Steva pkts and 1 Tbsp vanilla extract*
(reserve a 1/2 cup for topping the pie after freezing)
1 cup lime juice
1 graham cracker crust {a large sized one was perfect!}
Fruit of choice for garnish

Whisk the sweetened condensed milk with the juice of choice in a bowl, then whisk in the sour cream/cream cheese mixture until smooth. Pour into the graham cracker crust and place into freezer for 4 hours at least.  Spread a thin layer of sweetened sour cream atop pie after frozen, then freeze for an hour longer, decorating it with small sliced limes/raspberries, lemon slices, etc. as a garnish.

*NOTE: The original recipe calls for 1 container of Light Cool Whip. I am not a fan of high fructose corn syrup, but if you are ok with it and love Cool Whip, go for it!

Super easy, super refreshing and super yummy... ENJOY!

Shrimp/Chicken and Romaine Stir-Fry

My dear friend, Jackie, introduced me to this absolutely delicious recipe and I have made a few twists to it. The shrimp or chicken add perfect lean protein and the romaine lettuce and the cruciferous low carb veggies are amazing as fiber and nutrient rich additions, the flavor is divine, and the ease of it is fantastic. I LOVE it for lunch or dinner alone or atop spaghetti squash, shredded steamed zucchini, quinoa or brown rice.*

Sauce:
1/3 cup chicken broth
3 Tbsp low-sodium soy sauce
2 tablespoons rice vinegar (unseasoned)

1 Tbsp sugar or 1 Stevia pkt.
1 & 1/2 teaspoons cornstarch
1/2 teaspoon dried red pepper flakes (OR 1 tsp. chili garlic paste)

Stir Fry:
4 tablespoons extra-virgin olive oil
5 garlic cloves, minced fine or garlic-pressed

1 Tbsp. finely chopped peeled fresh ginger
1/2 cup sliced fresh red pepper, cut into 1" pieces
1 cup chopped yellow onion
1 cup fresh chopped broccoli florets
1 & 1/4lb peeled, deveined large shrimp, patted dry
{OR 1 & 1/2 cups cooked chicken breast, bite size pieces}
6 cups chopped romaine lettuce hearts (2-3 hearts)

Stir together all sauce ingredients in a small bowl and set aside. Heat oil in a large 12"-14" saute pan over medium high heat, stir frying garlic, ginger and onion until fragrant. Add broccoli and red pepper and stir fry about 3 minutes to soften. Add shrimp and stir fry until almost cooked through, about 3 minutes. Add half of romaine and stir fry until it begins to wilt, then add remaining romaine and stir fry until shrimp are cooked through and romaine is just wilted, about 1 minute. Stir sauce, then add to stir fry and simmer, folding through for about 2 minutes.

*Great over brown rice or quinoa on "Free Days", 7 and 14!}

Salsa de Fuega

I literally found this scribbled on a piece of paper in my recipe notebook, tattered and bent up and undoubtedly frantically written by me following feasting on such a treat and desperate to have the recipe, but then having a waiter or chef rattle off it's contents at lightning fast warp speed so as to throw me off. But you see, I am a PRO when it comes to collecting info. Especially info involving food. Should have been a spy. Needless to say, it is fresh, fantastic and it ROCKS over omelets, over fish or chicken, cradled atop pita chips, is FAB folded with sour cream and shredded roasted chicken and stuffed into romaine leaves or whole wheat wraps. I eat it by the spoonful straight too, as I am a confessed vegetable addict. My own personal twist? I add drained, rinsed black beans and a few spoonfuls of fresh from the ear sweet corn to add some extra color, fiber and texture. I LOVE IT and I know you will too!

Lots of fresh tomatoes! {I use 6-8}
1 small yellow onion
1 small red onion
1 bunch green onions
1 green pepper
1 orange pepper
1 yellow pepper
3 cloves garlic
1 jalapeno
2 avocados
big bunch of cilantro
juice of 1 lime
juice of 1 lemon
2 tablespoons of olive oil
salt and pepper to taste

De-seed and chop the peppers and jalapeno and saute' with chopped onions in olive oil over medium heat for about 5-7 minutes to lightly pan sear. Place in large food processor. Deseed and chop tomatoes and slice the garlic and add to processor. Pulse/chop to desired consistency. Pour into large bowl. Mince up minced cilantro and green onions and fold into mixture. Add drained, rinsed black beans and corn if desired and fold gently in. Squeeze the juices from the lime and lemon into a bowl and chop and add the avocado to it to coat. Fold all together into mixture and season with salt and pepper to taste. PERFECT to take to a BBQ or potluck! Put it in a pretty bowl and let the devouring begin!

Vegetable Frittata Wedges

Mmmmmm! What a PERFECT way to create a delicious brunch with your garden's bounty!

Aren't garden fresh vegetables so personally rewarding to enjoy? You know they are picked at their peak, that they have been grown with love and care by your hands, that they taste amazing and that their nutrient content is also fabulous for your body and health. So, showcase your harvest in a BEAUTIFUL way as these Vegetable Frittata Wedges provide a vibrant addition to both your recipe collection and meal menu.

2 tsp olive oil
Olive oil pan coating spray
1 small yellow onion, thinly sliced
1 small red onion, thinly sliced
1 can (11 oz.) asparagus spears. drained
1 red pepper, cut into thin strips
1 zucchini, cut into thin strips,
8 eggs, beaten
Fresh ground black pepper and salt
3 Tbsp Parmesan cheese, grated

Coat a quiche dish with the olive oil pan coating then spread the olive oil around the base of the pan. Spread the red and yellow onion slices in a thin layer to cover the bottom of the pan. Arrange the asparagus, red pepper strips and zucchini strips like wheel spokes on top of the onions, alternating colors to make it pretty. {Omigoodness, isn't it just SO pretty?!}

Next, gently pour the beaten eggs over the top of the arrangement and sprinkle on salt and freshly ground black pepper to your preference. Sprinkle the Parmesan cheese over the top and bake, uncovered at 375 degrees for about 20 minutes. Allow to cool for 10 minutes and then cut into thin wedges and serve. Serves 6-8.

Fireworks & Popcorn Lollipops!


In celebration of our freedom and the heritage and history of our wonderful country, the Fourth of July, America's "Independence Day", is a real party in the U.S.A.! From rural "Americana" to the vibrant city lights, coast to coast and everywhere in between, we love the culture, diversity and vibrancy that is within this beautiful country of ours.

And the fireworks are pretty awesome too ...

Especially when you are lying on your back on a cozy quilt gazing up at them ...

And enjoying a goodie of some sort, between the "ooh's and aah's"...

Something convenient, non-drippy, easy to hold for all ages, yummy and delicious and especially easy to eat in the dark! Like THESE little sweet beauties I found from a darling site I follow HERE, where you will also find how to make that ADORABLE "Beadboard Flag" pictured at the top!

"Popcorn Lollipops"
  • 6 quarts popcorn
  • 16 oz. mini marshmallows
  • 1/4 c. butter
  • 1 T. Jello-O powder, {my fav is raspberry}
  • white chocolate chips {Ghiradelli!}
  • sprinkles {match color to holiday/event}
  • lollipop/popsicle sticks/halved wooden skewers
  • cellophane bags and ribbons
1} These are made just like Rice Krispie treats! Melt the butter and marshmallows together, until marshmallows are completely melted. Remove from heat, and stir in Jell-O. Keep stirring until the powder is dissolved. Pour mixture over popcorn, and fold together

2} Coat your hands in butter, then form popcorn mixture into balls. Lay them out on a sheet of wax paper. Once they are all formed, place a stick in the bottom of each popcorn ball.

3} Melt the white chocolate chips in the microwave, stirring every 30 seconds. Dip the lollipops in to the chocolate, then sprinkle to your heart's delight. Place them in a heavy glass or bowl, then into the freezer for 2-3 minutes until the chocolate has hardened. Of course you can lick the melted chocolate bowl and spoon for that matter while you are waiting.

4} Place a cellophane bag over the "Popcorn Lollipop" and tie a ribbon around base to secure.

Red and white sprinkles with blue ribbons would be super cute and patriotic to celebrate the 4th of July, and I thought even coating them completely in white chocolate and then sweetened flaked coconut would be fabulous for a wintertime! A little silver bucket of "snowballs" left outside a door for a holiday gift would be darling and creative tied with a ribbon and note card.

Summer Time

Words can merely touch on the feelings that summer time brings. The memories made, the vacations taken, the relaxing times spent, the cocoa brown tans adorned, the sun-kissed hair, the playing, swimming, camping, exploring, discovering and simply loving the long days and sweet nights... many to be had under the stars by a crackling fire. Better yet, on a beach listening to the waves as dreams take over our thoughts.


Embrace these days and relish in them. Capture them in pictures to remember them. Awaken early to not waste the day. Begin with appreciation to God for the beauty He has given us to enjoy, and end the day with the same, as we are all SO blessed, aren't we! Most of all, be in the moment of these long sweet days. Time simply passes by and in a blink, this time will be gone, so make the most of each and every day.

Baked Tarragon Chicken

If you love lemony, buttery, moist, flavorful deliciousness, you will LOVE this amazing recipe, courtesy of my sweet friend, Jackie. Having it served to us during a dinner evening at her home years back, I remember thinking, "I seriously, literally, just fell in LOVE with a chicken dish!" You will most definitely agree, and the versatility of the finished pan full of baked yumminess is amazing... Here are a few things I do with mine:

I shred the cooked breasts and fold shredded cheddar cheese into them for a whole wheat wrap filling. I slice them and place atop steamed veggies and quinoa and drizzle with my "Yummy Gluten Free Cheese Sauce". I serve them with the savory sauce they bake within paired with my "Cauliflower Mashed Potatoes" and steamed veggies. I chunk them up and toss them with crumbled bacon atop salads. I slice them and freeze lots of snack bags filled with them for great mid morning/mid afternoon protein grabs. I shred them and bake atop whole wheat tortillas with artichokes and feta cheese for thin crust pizzas. The flavor, simplicity and versatility is simply amazing and I just know you will enjoy this great recipe as much as I do!

Of course if lemons are involved, I am involved.

"Dressing the chicken"
Ready to be baked in the oven.
I seriously could live on this if I were stranded on a deserted island. Of course, if it were deserted, there wouldn't be chickens, butter, or tarragon, so I suppose that wouldn't quite work out to my benefit actually.
Two notes! I made a slight recipe adjustment, making mine with half olive oil and half melted butter (the original recipe is for all butter) AND, I use more tarragon than is listed below... SO much tarragon in fact, that it could seriously mimic a drug raid in my kitchen as I LOVE tarragon! I made the chicken pictured above with the correct amount for your viewing pleasure, but mine are WAAAAAAAY more "herbed up"!)

Chicken pieces {Skinless, boneless breasts, cut in half}
Butter {about 1 tsp. per breast}
Olive oil {about 1 tsp per breast}

Dried tarragon leaves {1-2 tsp for every 4 breasts}

Fresh lemon juice {I use a whole lemon}
Fresh cracked pepper

Lawry's Seasoning Salt
Paprika

Preheat oven to 350 degrees. Rinse chicken and pat dry with paper towels. Place chicken in baking dish bottom side up. Melt butter in small bowl in microwave and add olive oil and tarragon to melted butter. Cut lemon in half and squeeze one half over chicken. Using a basting brush, brush half of the butter/olive oil/tarragon mixture over the chicken pieces. Sprinkle chicken with the paprika, pepper and Lawry's Seasoning Salt evenly. Doesn't it already look so pretty?!

Now flip each chicken piece over and repeat the same directions on the other side, using the remaining other lemon half and the seasonings, etc. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for about 15 minutes more, until done and your house smells incredible. Plate up the chicken pieces and then using a turkey baster or very carefully tilting the baking pan, fill up a little gravy boat or cup with the sauce from the baked chicken to use atop the chicken while dining. {The sauce is also delish on those "Cauliflower Mashed Potatoes" I mentioned in the beginning.} Enjoy!

Nutritious and Fun Kid Food

Starting our children on the right foot nutritionally is of utmost importance, and starting as young as possible to develop a versatile taste appreciation is key. Oh. My. Goodness... Desserts made with Godiva Chocolate!

WARNING!!!!
The information posted below is incredibly delicious and although it is during swimsuit season, I felt it was my duty to post them as I had 3 requests in 2 weeks for the recipes. Proceed with caution.

With SOOOOOO many summertime gatherings, birthday parties, graduation parties, baby/bridal showers and more going on as the season really kicks in, making a treat that isn't just basic and ordinary can add some flair and fun to the festivities. Adding REALLY good chocolate to it will make it oh-sooooo-amazing and totally memorable.

Chocolate Cheesecake Brownies

Just LOOK at the picture. Oh I KNOW! There are bite marks on my computer monitor. Once you make them and really bite into them, you will completely understand that these are surely eaten by the angels in heaven. They are absolutely INCREDIBLE I tell you!

Brownie Base:
1 cup Godiva Dark Chocolate callets
1/2 cup granulated sugar
1/4 cup (1/2 stick) unsalted butter, softened
3 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon instant espresso powder
1/3 cup all-purpose flour

Cheesecake Topping:
1 package (8 ounces) cream cheese, softened
1/2 cup granulated sugar
2 tablespoons unsalted butter, softened
2 large eggs, at room temperature
3 tablespoons heavy cream or whole milk
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 1/2 Tablespoons Godiva Dark Chocolate callets

Make the brownie base:
  1. Preheat oven to 325°F. Line a 9-inch square baking pan with aluminum foil and spray foil with nonstick cooking spray.

  2. Place chocolate in microwave-safe bowl. Microwave on high (100% power) for 1 minute. Stir. Microwave 15 seconds more or until chocolate is softened. Stir until smooth and let cool.

  3. Beat sugar and butter in a large mixing bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating well after each addition. Beat in vanilla and salt.

  4. Stir in melted chocolate, espresso powder and flour. Spread batter in prepared pan.

Make the cheesecake topping:
  1. Beat cream cheese, sugar and butter in large bowl until creamy and smooth, using electric mixer at medium speed. Add eggs, cream and flour, beating just until combined. Add the vanilla and almond extracts. Pour cheesecake mixture over the chocolate layer.

  2. Place chocolate in microwave-safe cup. Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate is softened. Stir until smooth.

  3. Drizzle melted chocolate over the cheesecake layer. With the tip of a sharp knife, swirl melted chocolate. Drop pan on counter to burst any air bubbles in the cheesecake layer.

  4. Bake for 35 to 40 minutes or until the cheesecake layer is set. Cool completely on a wire rack. Then chill several hours or overnight before cutting into 2-inch squares. Store refrigerated in an airtight container for 2 to 4 days or freeze up to 3 weeks. Makes 16, 2" brownies.

Truffle Mini Cones

A creative twist on the traditional ice cream cone, these decadent Godiva treats are ideal for a weekend afternoon with friends, or a fun family movie night. Need there be a reason to make them, really? I think not. Enjoy!

4 regular ice cream cones 5 bars of Godiva Dark Chocolate
4 Godiva Truffles (assorted types)

1. Using a sharp, serrated knife, carefully cut off the top third of a waffle ice cream cone.

2. Place chocolate in microwave-safe bowl. Microwave on HIGH 1 minute or until chocolate is softened. Stir until smooth.

3. Dip the wide end of the cone in the bowl of chocolate.

4. Place your favorite Godiva Truffle on the top.

5. Allow the chocolate-dipped cone to cool.

6. Serve upright in a bowl filled with coffee beans. Makes 4 cones.


Lemon & White Chocolate Cupcakes


Oh. My. Goodness. As I BEYOND ADORE LEMON ANYTHING, when you combine it with creamy, dreaminess it is superb, as are these incredible cupcakes. PERFECT for a tea party, birthday party, bridal shower, or alone all to yourself for no reason at all... they are delightful, beautifully elegant and refreshing. Topping each with a big, fresh summer raspberry would add a sweet bite and bright splash of color.

Recipe Photo

  • Special Equipment: 2 1/2-inch muffin pan, cupcake paper liners, electric mixer

Cupcakes:
1 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons unsalted butter at room temperature
3/4 cup granulated sugar
2 eggs
2 tablespoons lemon juice
1 tablespoon grated lemon peel
1 teaspoon vanilla extract
1/2 cup buttermilk

White Chocolate Cream Cheese Frosting:
4 bars (1.5 ounces each) Godiva® White Chocolate, coarsely chopped
1 package (8 ounces) cream cheese at room temperature
1 stick (1/2 cup) unsalted butter at room temperature
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
3 cups confectioners’ sugar

Garnish:
White chocolate shavings
Confectioners’ sugar

Make Cupcakes:
1. Position the rack in the center of the oven and heat to 350°F. Place 12 cupcake paper liners in a 2 1/2-inch muffin pan.
2. Sift together the flour, baking powder, baking soda and salt into a medium bowl and set aside.
3. Beat the butter and granulated sugar in a large bowl with an electric mixer at medium speed until light and creamy. Beat in the eggs one at a time. Beat in the lemon juice, lemon peel and vanilla. Beat in one-half of the flour mixture, scraping down sides of bowl. Gradually add the buttermilk and beat in the remaining flour mixture until the ingredients are mixed.
4. Divide batter among the muffin cups, filling each about one-half full. Bake for 20 minutes or until a toothpick inserted comes out clean. Cool cupcakes in pan on a wire rack for 10 minutes. Remove cupcakes and cool completely.

Make Frosting:
Place the white chocolate in a microwavable medium bowl. Microwave on HIGH for 1 to 1 1/2 minutes. Let stand for 1 minute. Stir until it’s completely melted and smooth. Cool slightly. Add the cream cheese, butter, lemon peel and vanilla. Beat with an electric mixer at medium speed until the ingredients are mixed. Add the confectioners’ sugar and beat until the frosting is smooth.

Assemble Cupcakes:
Remove the paper liners from the cupcakes and turn the cupcakes upside down. Spread a 1/4-inch thick layer of frosting to completely cover the top and sides the cupcakes. Spoon the white chocolate curls over the frosting, gently pressing, if necessary to help them adhere to the sides. Sift the confectioners’ sugar over the tops of the cupcakes. Makes 12 cupcakes.

Let's Heat Things Up! {wink wink}

A sex post ... Fun! Perhaps a post about how to boost your libido with delicious foods? Even better! How about a little bit of both? Okay, here we go then ...

Here are some of the top foods that will boost your sex drive! Not only do some of these health foods keep the doctor away, but they boost up all kinds of things in the love department. Now that I've sparked your curiosity, here are a few of nature's finest foods to spice things up in the bedroom and help your libido.

Eggs
Egg yolks contain cholesterol, which are important building blocks for testosterone. Eating raw eggs is one of the most direct ways of increasing testosterone and ultimately enhancing the male libido. Eggs are also one of the most significant sources of vitamin A, which keeps the epithelial tissues healthy. These tissues line all of the internal and external surfaces of the body, specifically the vagina and uterus. Other sources of vitamin A are liver, cheese and carrots. {I love the versatility of eggs and have a bazillion recipes to make them.}

Spinach
Spinach, cabbage and dark green leafy veggies contain Indole-3-carbinol, which actually decreases the amount of estrogen in the male body, leading to more lean muscle and testosterone development. The irony is that it also helps support the production of estrogen in women. Spinach and other dark green "leafies", including tea, are great sources of manganese, which the female hormone estrogen relies on to maintain a healthy metabolism. Manganese can also be found in foods like wholegrain cereal, wheatgerm, raisins, peas and beans. {I am a spinach lov-va! In everything, always in my fridge, fresh chopped in my freezer...}

Avocado
Unlike most aphrodisiacs that mainly enhance he libido of men, avocado is known for its ability to significantly increase the libido of women. It does contain B6, which helps in the production of male hormones; but the fruit's potassium aids in regulating the female thyroid gland while simultaneously enhancing libido levels. Avocados also contain high amounts of folic acid, which help metabolize proteins. {Avocados are a staple around here too. It's like a snack complete with it's own serving bowl!}

Dark Chocolate
Dark chocolate is good for the immune system because it is filled with antioxidants. It is also good for increasing libido in men and women because of phenylethylamine, which is a chemical found in chocolate that gives the brain the feeling of being in love, thus the libido level in men and women increases. Another benefit to dark chocolate is that it contains an alkaloid called theobromine which is similar to caffeine as a stimulant. {I have a "Godiva Chocolate Rewards" card. Enough said.}

Oils and Nuts
Oils and nuts are rich in vitamin E, a powerful antioxidant that helps prevent damage to the ova, which the female body produces with the ovary. Nuts like sunflower and vegetable oil are also an excellent source of linoleic acid, which is an essential fatty acid for the production of sperm. More sperm buildup equals a larger sex drive. {Well, there ya go then! Saute' time!}

Oysters
Oysters are a considered to be the richest source of zinc, which is one of the key nutrients known to enhance libido and sperm production in the males. In addition to oysters and other shellfish, zinc can be found in brown rice, lean red meat and turkey. {I LOVE oysters and gouda cheese on crackers! Perfect right by a campfire followed up by S'mores and evidently some smooching!}

Blueberries

Blueberries are high in soluble fiber, which helps remove excess cholesterol from the blood before it gets absorbed and deposited on artery walls.
